Help Choose a Destination for Our Next European Trip

We are planning our next trip to Europe to celebrate my 35th birthday. Last week of May/first week of June... 2 or 3 other couples will be coming with us. We'll have about 7 - 9 days to spend there. We are debating where to go... Places we are considering are Lake Como region, Greece or Northern Spain (Basque region)... Whichever place we choose, we'd like to rent a villa there, go on some day trips, eat good food and relax... Greece is very appealing but a) not sure it will be warm enough to swim, b) seems like to do it properly, we'd need at least 10 full days... None of us have been to Greece while we've all been in other parts of Italy and Spain... Any opinion on which location to choose/recommendations where to stay, what to do there would be much appreciated.
