I have been to many Champagne houses in Reims. It really depends what you are looking for. The big houses give you a bog standard tour and are not exactly exciting - whereas you can easily go to a small house and get a private tour and actually see how things work - none of this hand riddled rubbish.
Of the Big names that you mention - I enjoyed the Mumm tour the best.
We toured the Piper Heidsieck. You get in a remote controlled car and go thru the caves as they explain the process. It is programmed for whatever language you speak. Afterwards a glass of champagne, then their gift shop which was really nice.

About 20 minutes to Taitinger. Neat cellars, under ruins of an abbey and old roman quarries.
