Have you done a bike tour on an e-bike? Or, have you ridden one?

I am researching possible self-guided bike tours in Europe (we've done two in the past). We are purely recreational cyclists and are getting older, so I have been limiting our choices to some of the easier routes that are primarily flat. Now, I see that some companies offer the option of using an e-bike rather than a regular bike. This would open up many new possibilities of different areas that would be too challenging for us on regular bikes.

Does anyone have any experience with e-bikes? What are your thoughts? Thanks.
