Have 2-hrs to decide-Should I save Amalfi + S for another trip?

I'm the OCD-er who asked about my itinerary - Venice, Florence, vineyard in Tuscany, Rome, Amalfi, Naples.
I got some great feedback and it really is making me rethink by trip - and more urgently my Departure city - as I need to book it today or loose my $1200 voucher.

After seeing your suggestions - I'm thinking of cutting the Amalfi Coast and just staying 2 weeks in Rome and soaking it all in - and maybe putting of the Amalfi Coast and Naples for another trip - just to the south of Italy

Before I had the work at the vineyard lined up I was going to spend a month in Rome - so spending more time there was my first instinct.
If I leave from Rome rather than Naples I can also get a direct flight back to NY.

Also,
I've been to Florence - but I've been longing to go to Venice for decades - so since I can talk a morning train to Florence from Venice on my way to the Vineyard - and be there in 2-hours, perhaps I should extend time in Venice as DRJ suggested - and do 1 night in Florence. With no jet lag and a morning train it will give me a day and half before I need head to Tuscany.

Thoughts? I feel like I'm on Beat The Clock (forget it, you're probable to young to get the reference!)
