They go, like, really high in the air, and really fast. Hundreds of miles an hour. <BR> <BR>And they take the route that flies over water pretty much the whole way.

Indeed, they do all of the above. Corsair is the airline subsidiary of Nouvelles Frontieres (New Frontiers), the biggest french Tour Operator. I've flown with them 2 times on other routes, once we were really crammed and the other time it was almost ok. <BR>The service is medium but the price is cheap.
