Greece/Turkey - What would you do?

My husband and I are planning on flying into Athens and out of Istanbul in September 2015. We will likely have 15 - 18 days to barely scratch the surface with the hope we will be back later. I have just started figuring out a basic itinerary and the amount of information is overwhelming. I would really appreciate your help in filling in the blanks. We are interested in history, beaches, scenery, but at this point I want to know what you really enjoyed, because some of the best planning comes from ideas I've never considered. So far my thoughts are the following. Thanks in advance for any advice.

Athens 2- 3 days
Santorini 3 days
Crete 4 - 5 days
Istanbul 3 days
????? 3 days
