Germany Rhine/Mosel Short Trip Questions

I am taking a side trip from London for 3 days with friends and family (there are 5 of us from 18-35) to Germany. Here are our tentative plans:

Tuesday 1/16 late evening: we land in Dusseldorf and drive (we are renting a car) immediately to Trier and stay at the Park Plaza (maybe? -- I wanted to stay at the Hotel Haus Lippman but they are closed).

Wednesday 1/17: see the sites in Trier, pack up and drive the Mosel Valley, stopping in Cochem, and staying in Koblenz. Or should we stay in another town?

Thursday 1/18: See Bacharach and St. Goatsbourg and drive up to Cologne. Stay the night in Cologne and fly home Friday afternoon.

We love to drink wine, go to museums/historical sites, have fun, eat good food and relax.

What do you think? I am kind of disappointed that a lot of places are closed for the winter along the Rhine & Mosel (like the Schoenburg Castle and Burg Eltz). Are we making a mistake traveling this region at this time? The only hotel we booked so far is our night in Cologne, since we are leaving there the next day, so we are open to new ideas. Thanks!
