I've been to the key cities in Poland and loved them. I am considering a return trip, either southern area or Gdansk and Lithuania. I'll ask about the latter in this post.
Is there a convenient way to get from Gdansk to Vilnius? I'd prefer a train to a bus, but if I'm stuck...... I tried to use the 2 train sites that people posted, but even the one that says it is in English is really 90% Polish - esp the important parts!
I thought I'd fly into Dublin or London or ? and get a cheap flight to Gdansk. Travel surface to Vilnius. Then a flight from Vilnius back to Dublin or London or ?

I don't know which websites you are looking at but it sounds like the Polish one. Try http://bahn.hafas.de and select English from the drop down menu. It seems to have all Polish train information but you can't buy Polish train tickets from it.
I think that Gdansk -Warsaw, Warsaw - Sestokai -Vilnius is the easiest way by train. It is possible to change at (Gdansk) Ilawa- Olsztyn-Elk -Bialystok but then you need to overninght to catch the 1017 to the border and onwards to Vilnius.
If you can't find a cheap flight from Vilnius to London there are often low fares from Vilnius to Doncaster-Sheffield. There is a bus to the rail station and a train to London from Doncaster takes 2 hours. Buy the train ticket well in advance though to get a reasonable fare. (Collect Ticket on departure from Doncaster station with a card).
I would rather purpose You the southern part of Poland. Krakow, Zakopane or Silesia Province. This are beautiful, quiet places with many attractive things and places, which HAVE TO BE SEEN during continuance in Poland
