Flying into Shannon out of Dublin - Ireland - Please help

Flying into Shannon out of Dublin - Ireland - Please help
Greetings. I have been planning this trip for two months. Originally, my daughters (college age) and I were flying into Dublin out of Shannon. I found less expensive flights the other way around. So now I am so not sure where to start. We will be staying 10 days and I will be driving ( : (.
Due to time limitations, we would like to do southwest to southeast. So here are my thoughts and please, please share your thoughts on the itinerary, so I may book our B&B's. Believe it or not we leave in two weeks.
Arrive Shannon - drive to Limerick or Bunratty,
Bunraty Castle & Cliffs of Moher and stay in Galway (?) for two nights
Day 3 & 4 Dingle - Dingle Peninsula and drive around Slea Head, perhaps River Shannon
Day 5 & 6 Ring of Kerry (?) not sure where to stay _________
Day 7 - Cork - Blarney Castle
Day 8 Kilkenny - Rock of Cashel
Day 8-10 Dublin
Dublin is the only location we will stay in a hotel. The girls and I would love to stay in B&B's where we can enjoy the country. All of your suggestions would be appreciated. If you believe the itinerary above can be improved, by all means help this Mom out. Also if you can suggest any B&B's in any of the locations above, we would appreciate it as well.

Ennis would be my choice for the first two nights to see Bunratty, The cliffs and day trip to Galway.. Grey Gables is the B&B we use right in town.
Dingle is expensive accommodation and I would just drive the peninsular between Ennis and Killarney (Sunnybank guest house) for 2 or 3 nights. Follow this with a couple of nights around Cork, I prefer Cobh or Blarney to Kinsale. Kilkenny (Rosquil House) via Cahir and Cashel is a good option and then either over Wicklow and Glendalough or up to Nass and the National Stud/Japanese Gardens up to Dublin.

Either work, Kenmare is less tourist central but to drive the Invaragh (ring of Kerry) anti/counter clockwise Killarney is a better option and the town is big enough to sneak away from your fellow tourists should you wish. check accommodation and decide,

t2p has also recommended the Ring of Beara rather than the Ring of Kerry.
A good friend of mine recently took both Rings as he was in Ireland for business for an extended period. He said that the Ring of Beara was much prettier and had far less tourist traffic.
