Florence/Tuscany cooking class

I will be spending 4 days in Florence in August with my daughter. We thought a nice break from the museums and sightseeing would be to take a cooking class. Since we both are reasonable accomplished cooks, we are looking for something a little more than just making pasta and sauce. I have seen cooking classes that range in price from 75 euros to over 200 euros for a half day. We are looking for something that will be both fun and educational. Any suggestions from those that have done something like this?
