Florence Italy to Paris, France by Train

Trying to get to Paris May 19th, 2012 by train. Want to see the countryside and have a relaxing trip. Last year I found train trips with only one change. This year it is three. Florence to Milan, Milan to Zurich and Zurich to Paris Gare de Lyon. I have found two trips on Trenitalia's web site and one on TGV. Florence to Milan, mini fare 29E, Milan to Zurich, Smart Fare 19 E and Zurich to Paris 79 E 1st class with meal. I have a few questions.

There is a price for Zurich to Paris of 49E 1st class for two (no meal, which is fine) on almost every day except the 18th and 19th. Absolutely nothing is shown as being available. Will those dates eventually turn up at a low fare?

I have allowed over an hour between each transfer. Buying cheaper tickets I worry that I might not make a connection if trains are late and have to pay full fare. Does it happen often?

Is there another choice from Florence to Paris with less changes? Not interested in the night train. There are two of us traveling together.

Also, should I wait or book now? Will there soon be an influx of mini or Smart tickets?
