Flight out of Madrid Airport
I have a flight out of the Madrid airport on Iberia (terminal 4) at 8:45 a.m. My hotel has a shuttle that can get me to the airport at 7:00 a.m. Is that enough time or should I take a taxi earlier? I can't find any information on the Iberia website regarding how much time before the flight you need to check in.

it's your airline that should tell you how long you need to check in.
I just goggled [or even googled] iberia, and if you go to "before you fly" you will find the minimum check-in times for various destinations.
looks as if 1.45 hours shoudlbe sufficient for most destinations, but you need to check this for your specific flight.

It seems too short a time, IMHO. I got to Barajas airport about the same amount of time you are suggesting and felt incredibly rushed. This was after checking my luggage and getting my boarding pass the night before (after being bumped due to Iberia overbooking) and having only a carry on with me.
Then again, it was late afternoon and security was a madhouse, so an early morning flight may bring different results. But if I were to go through that airport again, I'd give myself a minimum of 2.5 hours.
