Five day stopover with 2 y/o and 6 y/o horse-crazy girl

We lucked in to a Icelandair stopover in late August and early September. We have just five days and two little ones. We love nature, horses, hiking, backpacking, adventuring, birding, and we are pretty durable. We are a 44, 41, 6, and 2 year old. I'm considering either:
1) roughly one day in Reykjavik, three days on the Snaefellsjoekell Peninsula, then one day back in the capitol.
2) renting a campervan and doing something similar, but with more freedom to get into the NW fjordland.

Any help would be great. Lodging has been a challenge with such short notice, and I'm wary of thin walls as our 2 y/o is an unpredictable sleeper. Thank you in advance
