First trip to Ireland (David Gray)

My husband and I were lucky enough to get tickets to see David Gray in concert in two locations - still can't believe it!

We are catching him in Wexford and Ennis. We'll be in Ireland for 7 nights, our plan is to spend 1 night in Wexford, 2 nights in Ennis, 2 nights in Galway, 2 in Dublin. Ennis and Wexford are set by concert dates, but the rest of the trip itinerary could be changed if needed.

We will be driving from Wexford to Ennis on Tuesday. Is it doable to visit Blarney Castle and Cork on our way to Ennis or would we be wise to take the more direct route?

This has all happened quickly, as in we found out late yesterday, so I'm not able to do my usual obsessive planning.

Any suggestions/recommendations regarding our itinerary? We tend to prefer the "road less traveled" type of travel (we'll have a rental car).
