I will be flying into Dublin Sept 21, 2011. I will be there until Sept 28, 2011.
First off, how hard is it to get to other countries from Ireland in case we feel adventurous and try to visit, say, Liverpool, or Italy, etc.-or is there a country that we NEED to see in our lifetime.
My main question is:
is it best to take train/rail/bus from Dublin into the West coast and then rent a car? or should we rent a car all the way? Trying to figure out is it worth the $200+ to rent a car (plus around $8 a gallon in Ireland??) How many times would we fill up going from Dublin-Cork-Kerry-Galway-County Mayo-Galway to Dublin.
are Hostels better for the cost, than B&B's or hotels. What is the best Castle to stay in?
Also if anyone has suggestions for Itinerary's for the 8 days i will be in Ireland-I would be most greatful! (by bus/rail/train or car.)

Too many questions for one post, but I'll try a few. It's very easy to fly from Dublin to the UK or most European countries. Have a look online at who flies into and out of Dublin and where to.

Only you can say where you need to see. There are lots of places that it would be nice to see, but budget and time knocks a lot of them out. You say that "I" will be flying, but then should "we" rent a car. It all depends on how many of you there will be and how important independence of travel is to you, as well as cost.
Have look at http://www.viamichelin.co.uk/ to work out your mileage and potential cost for fuel.
If you plan to do that loop around Ireland, you won't have time to go to Liverpool or Italy or anywhere else. That's actually a lot to put into a week, just with Ireland.
"Are hostels better" - I can't speak to Dublin; as a bigger city, it's more expensive. But when I visited Kerry and Clare a few years ago, there wasn't much difference in costs between hostels and bed & breakfasts, and the B&Bs are much more comfortable (and obviously you get breakfast!).
If you plan to go around the countryside, a car will give you much more flexibility.
My advice is to look for trip reports and threads here about Ireland - that will give you a good idea of what others have seen in the time you have, and how long it takes to get from place to place. Things move more slowly there than you might realize!

No idea. Only you know the fuel consumption of the car you're going to hire - and you're as able to work out the mileage from any website as anyone else.
But you can't do the route you're suggesting by public transport. You can get a train from Dublin to Cork, or to Galway (both, to be honest pretty underwhelming towns). But your round trip (far from underwhelming) is virtually undoable, except by car. Motorways to Cork from Dublin, and back to Dublin from Galway, are now virtually complete.
Collect your car from Dublin airport, make sure the hire company has fully explained how you pay the toll on the M50. do your trip then return the car to the airport.
