First time to Italy and France

Family with teenage son visiting in July for 15 days. Arriving to Rome, leaving from Paris. Moderate budget, love history, castles food, vineyards/wine, hiking, scenic views, some art. We know we can't visit every corner in both countries, but would like suggestions to focus for time of year and regions/routes that would be great to see and not exhausting to travel. Possibly 3 areas in each country so we are not checking in/out so often that offer short joints to other locals.
