Easter in Tuscany - which town to stay?

Need help from Fodors experts. Will be driving from La Spezia into Tuscan region on Saturday of Easter weekend. Traveling with my husband and college daughter who is studying in Rome this semester.

Can't decide where to base in Tuscany, knowing we are there Saturday evening until Tuesday morning, right over the holiday. We understand that shops will be closed on Sunday-Monday for the holiday. Would like to enjoy beauty of region and food. Do we stay at Palazzo Ravizza in a larger city like Siena where more things may be open? Or at Villa Cicolina in Montepulciano where we can have a cooking class on Easter Sunday and shorter drive to Rome on Tuesday morning? We are not Catholic so attending a church service is not a must. Any thoughts on weather in late March? We are open to any ideas for hotels/villas/towns. Thank you!
