Dundee cake or English fruitcake- Recipes?
It might be to late to make a Christmas fruitcake but does anyone have a good recipe for an English style fruitcake or a Dundee cake? I made 4 fruitcakes this season and have given most away. The people who I give them to love these cakes, so no jokes please.I soak my fruits in spirits the night before I bake it. I usually make these in October. I would like to make an English or Irish recipe.

Thank you Sheila. That recipe looks delicious. My cake is a dark fruitcake. I used treacle usually but had to substitute molasees this year. The cake came out a little lighter but the flavor is so good.
I remember flying home on British Airways and they served Dundee cake. It was so good. Thank you and Happy Holidays to you.
