We are all set to drive from Paris to Nice--16 days--family of four--kids ages 9 and 11. 5 days in Paris, pick up car--drive to Amboise (2 nights) Sarlat (4 nights) Carcassonne (1 night) Arles (2 nights) and, finally, NIce (2 nights). We are looking for any suggestions re: places to stop en route, family-friendly restaurants, etc. Also--driving tips!! Thanks very much for any help....

Thanks so much for your advice. We'll definitely hit Beaune! (thanks for the links, too...). La Cite's family room was booked, so we settled for a garden suite at Le Donjon (mixed reviews....but it's just for one night. Have you checked out this hotel?).
So exciting to be leaving in a week! Bonne vacance! We have 50 days to prepare (and miles to go, let me tell you!).

I would strongly suggest renting a diesel, it's cheaper per liter than gasoline, and better overall mileage.
Make sure you rent an auto that's large enough for all your luggage and seriously consider limiting your luggage as it all has to fit in a car. Plus you don't want exposed items stolen.
