Driving from Torquay to Southampton

In mid-May we have three full days to travel by car from Torquay to Southampton and would like to take the most scenic route, stopping at interesting places for a quick look around on the way. I am having trouble deciding which routes to take and judging the distance we can travel each day without over or under doing it. I am not sure if my choices of overnight locations are the most practical. Could I have feedback on the following proposal please.

Day 1: From Torquay travel to Exeter via Teignmouth and Dawlish - visit Exeter Cathedral, Quayside, Topsham, etc.

Exeter to Exmouth - Sidmouth - Beer - Seaton - Lyme Regis.

Travel to Weymouth via Abbotsbury or Dorchester?? Stay overnight at Weymouth.

Day 2: Weymouth to Lymington - visit Lulworth Cove, Poole, Bournemouth, Christchurch. Stay overnight at Lymington.

Day 3: Lymington to Southampton via Brockenhurst and Lyndhurst, New Forest. Visit Winchester Cathedral if we have time.

Some of these places will only be a "drive through" or a half an hour look around and some may be an hour or two, depending on how we like the look of the place. I have no idea which places are the most appealing but have been recommended Lyme Regis and Lulworth Cove.

Can anyone suggest a better itinerary and ideas for overnight stops if the above is not the most ideal or practical please. We are open to suggestions and are keen to make the best use of the limited time that we have available. An idea of the amount of time we might need to spend at each place would also be appreciated.
