driving barcelona to madrid in 2-3 days- itinerary help. wine stops?

Hi, we have our final 2-3 nights left to book on our 34 night spain driving trip and we are totally unsure of what to do/see. we finish in Barcelona on the 27th june and will need to end our holiday at Madrid airport on the evening 30th june. We will have already seen the Pyrenees area. We will have a 7 month old baby with us. We are also not very keen on Zaragosa and want drives no more than 3 hrs max at a time (can have more than 1 drive in a day). we like the sound of checking our wine regions or smaller towns. So far we have the following possible ideas:
1- check out wine regions between BCN and Madrid- we hear they exist but dont know much about any - where to stop that also makes good tracks towards Madrid and also decent places to spend the nights. for this we would really love recommendations for stops that will help us make an itinerary- including where to spend our 2 nights. we think the la rojia region might be too far plus we will possible be seing la rojia earlier in our trip as a day trip from san sebastian
2- head to soria area as they will have still be celebrating the end of the sant juan festival including a parade on the sunday.

just a note- we must take the car as we would have too much luggage with a baby to take bus/plane from BCN to Madrid. - we don't need to spend our 3 nights at the same place and if the itinerary works well our last night could also be in Madrid does not have to be on the road.
