Day trips from Amalfi: Paestum? Ravello? Cooking class? Pasta factory?

As part of our itinerary we will be spending 4 days and 4 nights in Amalfi. (we will also be seeing Pompeii, 2 days/nights in Positano, 2 days/nights in Capri, one night in Sorrento, one day in Naples).

We'd like to take a half day trip to Ravello from Amalfi. Do we take the bus to do this and is it something flexible that does not need to be booked in advance?

We were also considering doing a day trip to Paestum as well, but we are not set on it. It looks like we would take the bus to Salerno and then change buses to Paestrum. Is this a worthwhile day trip? Would it be better to book a "tour" from Amalfi <--> Paestum? I think I found one online for 37E pp which includes transportation and a guide, but not entrance fees. How necessary is a guide?

Are there cooking classes or pasta factories in the area that we could do one of our days in Amalfi? Any other suggestions of interesting things to do in the area besides walk around and explore? We don't want to be constantly on the go but are trying to take advantage of interesting things in the area while we are there.
