My wife and I are looking for a a couple day trips to make from Munich in eary December. We have done this trip before and have previously visited Salzburg, Garmisch, Mittenwald, Fussen, Bad Tolz, and Innsbruck. We would like to visit someplace new this trip, hopefully with a good chance of seeing snow, if possible. I would appreciate any suggestions.

How about Herren Chiemsee Palace?
There are some very nice towns north of Munich, which are an easy train ride. Bamberg is my favorite that I have visited thus far. Very charming town, beautifully situated, and some absolutely top-notch beer. Nuremburg and Wurzburg are also very good. Wurzburg is known for its wine. Rothenburg obT is also good, but not as easily reached as the others. Rothenburg is very touristed in the summer, but in the winter it would probably be absolutely lovely. It is a neat walled town with a lot of wonderful old buildings - like Bamberg, it was not heavily bombed in WWII, so still has many original buildings.
On a recent thread, Regensburg got very good reviews from many posters. I haven't been there, but it is on my list of places to go.
Closer to Munich, we really enjoyed Freising and Herrsching - both can be reached by S-Bahn from Munich. Freising is a very nice town with the distinction of having the oldest brewery in the world. Herrsching is on the Amersee, so it has very pretty views. It is also down the hill from the Andech's Monastery, which has an incredible church and some of the best beer in Germany.
I have been to Herrenchiemsee in Dec. and don't recommend it unless the weather is unusually beautiful.
Christmas Market time - it would be hard not to recommend Nurnberg. Just over an hour by direct train - it is the mother of all December day trips from Munich, IMO.
Of course, if you hate gingerbread and grilled sausages, and mulled wine and Christmas......
I agree with Nurnberg but best not to go on the weekend.
When talking about snow you might rule out the cities like Nuremberg, Bamberg, Regensburg in "normal" weather - it doesn't look like we'll get any snow in the flat lands soon.
That leaves the mountains - you have already visited quite a number of those towns and all I can recommend is Berchtesgaden, which is still missing on your list.
We've just got back - we hired a car in Munich for one day (from Sixt, we had to catch the U Bahn a few stops to pick it up, but this got us out of town traffic easily)
and drove to (and past) Neuschwanstein via back roads, then to Fuessen and turned left into the Austrian Tyrol. Late October, no snow, but there will be in December. Good roads, spectacular scenery (and we had a lovely sunny day) , came back via Garmisch, and the alpine lake roads right of the autobahn. Would love to do this trip with snow - but the day has to be clear, I guess.
Depending on how you are traveling, Rothenburg is a great place to visit. You might want to plan to spend a night there so you have the evening hours to enjoy the visit after the crush of tourist busses leave in the afternoon.
We have been in Bavaria around Christmas when everything was covered with snow and one year when there was absolutely no show even in the mountains. Look at the forecast for snow or plan to go South from Munich toward the Alps to insure snow.
You have already been to some of the most charming places within striking distance of Munich. You didn't mention them but since they are so close to things you have visited you may have already seen Oberammergau and the Ettal Monastary between Fussen and Garmish.
