Croatia/Montenegro Itinerary ???

I've spent days reading the Board and the information is extremely helpful.
I'm putting together a trip to Croatia to begin around May 10, 2014 and very much need your opinion.
My 2 options will be 10 or possibly 15 days.Length of trip depends on husband's availability.
We like to travel at a relaxing pace spending two nights at a minimum in each place. We don't start out at the crack of dawn. We love long lunches outdoors, preferably. Our favorite time is when the tourists leave and we feel like we live there.
We like being by the water. Enjoy kayaking, hiking, sailing, wandering in old villages, visiting markets , local restaurants, wonderful museums and historical/architectural sites. Prefer accommodations with character and quiet location.

OPTION May 10-May 20 Rough lay out as follows:

Day 1 to 4 arrive around 3 in DUB. We would like to spend a couple of days in Kotor/Preast. Should we rent a car and go there first? Then return to Dubrovnik for two nights? Or, the other way around? I know many people do a day trip from Dubrovnik but my husband is intrigued by seeing Montenegro now before totally being discovered by tourists. Advice please? Would like to visit Lokrum island off Dubrovnik, too.
Day 4. Drive to Split to catch ferry/catamaran to Havar. Spend 4 to 5 nights. Visit : Mijet, Korcula and Trogir
Day 10 Return car at Split airport and return home.
This itinerary is dependent on ferry schedules. Also, where can we drop off car since we would not need on Havar? Would we have to take to Split airport?
I an not interested in spending the night in Split.

OPTION May 10-27
Starts like the first option.
After Havar we would have to rent car in Split for trip to Plitvice Lakes. How long would this take?
Spend two night in Plitvice
Depart Plitvice and have little time for Istria. What do you suggest? We need to be In London to fly home on the 28th.
I'm not dead set on the two options above, but they do focus on the locations I'm most interested in.
Any suggestions for "must see and do" in locations I've mentioned will be very helpful!
