Cote D'Azur & Provence 9 Days Please Help

My husband and I are traveling to Cote D'Azur & Provence at the end of the month for 9 days. We would love some advice on how to best spend our time there.
(We are big fans of art history, architecture, the beach, people watching, food & wine.)

We will be flying into Nice, but our home base will be in Mougins (near Cannes) and we will have a car.
For the first few days we hope to explore Cannes & Nice (Thursday, Friday & Saturday). We would love reco’s for beaches in Cannes as we know that Nice doesn’t have sand beaches, as well as great restaurants, and must see places.

Sunday a.m. we were hoping to drive to Avignon, explore the city, the market, Palais des Papes & Pont Du Gard. Spend the night in Avignon, then Monday a.m. head to Camargue park (not sure if we need the whole day here?) then go to Arles and stay there for 2 nights, exploring the city itself, as well as, taking half a day trips to St. Remy & Luberon? (Could we sneak in some wineries?)

Wednesday we plan to drive back to Mougins, spend the night there and for the last 2 days explore Monaco and the surrounding areas.
