CORFU --Best way to spend one full day

DH and I will be in Corfu for one full day. We aren't traveling by cruise so we have more than 8 hours to spend. We arrive at night by plane from Athens on June 15th and depart early morning on June 17th. Corfu is early in the trip so we'll still be suffering from jetlag. We're staying in Corfu Town at Bella Venezia. My plan was to spend some time in Corfu Town and then either hire a taxi for a private tour or, rent a car and go exploring. Photography is always big to both of us. Is the island small enough that we could realistically drive around it in an afternoon?

Also, if anyone had a restaurant recommendation on Corfu please let me know. I know Rex shows up in many guidebooks but, I thought I'd ask in case there are better options.
