cooking class for 1 day in rome

we (1 couple) will be in rome in september for the first part of our trip. we'd love to fit in a cooking class for a day. our first choice was "cooking classes in rome" with chef andrea consoli but he is fully booked. i have searched tripadvisor for other options. fabiolous comes in 2nd but he is too expensive. he charges 110 euro vs chef consoli's 65 euro. the main difference is that fabio includes a tour of the market but we can do without that.

the others i am considering are:
eating italy's cook with nonna (85 euro)
spicy italian life cooking class (75 euro)
walks of italy pasta making class (~60 euro)

we definitely want to learn to make pasta from scratch. ideally, we would learn to make more than 1 type of pasta and other dishes too.

do you have any recommendations or opinions of the classes i listed above?
