I think you will have no problem.
Although I haven't had that flight/connection I have transferred through Amsterdam and it was easy, very well organized, easy to do. An hour 40 mins should be plenty of time, really.
Maybe someone else will be able to be more specific.
To give you a good answer we need a little more info.
What airline are you flying LCA to AMS? If it is KLM then you won't need to go to the Delta check in counter as you will be able to check in for both flights at LCA. If this is the case then you have plenty of time, except if your LCA-AMS flight is very late. All you would need to do is be at the gate before they close the door since you'd already have your boarding pass in hand.
If you do need to check in with Delta then you don't have as much time as the cut-off for Delta check in is 60min before departure.
If at all possible try to check in online from Cyprus before you leave. I'm not sure it's possible, as Delta may want to scan your passport.
If you need to go to the Delta counter, the Delta check in would be before security, not after.
Here's the check in info from the delta website.
"When traveling to/from a destination outside the United States, you must be checked in at least 60 minutes before your scheduled departure time. This minimum requirement applies to all customers checking-in, with or without baggage. Customers who fail to complete the check-in procedures by these deadlines will not be able to travel on desired flights and change fees may apply. "

The minimum connecting time is built into your connection at AMS, Cyprus Airways to DL/KL, LCA-AMS on CY. If it wasn't possible to connect in this time you would not be able to book it on 1 ticket and it would not be offered for sale as a connection.
Security for the US is done at the gate at Schiphol.
You will need to show your passport there, and they will check your hand baggage, and possibly your ESTA registration, though that should be done in Cyprus if you are checked through.
Cyprus isn't Schengen so you do not need to go through passport control at Schiphol unless you need to retrieve your bags.
If you are not checked through and need to reclaim bags and recheck them and yourself you will not have enough time.
