I planed atrip to walk to Camino de Satiago with my grandson.
We have to fly into Madridrom Toronto, or do we? Or trip starts at the 6 of July near Bilbao, and end at Santiago de compostella. From there we have to find our way back to Madrid. Just to confuse all this some more my Grandson extracted a promise to see Paris before flying back to Toronto
Would I be best to rent a car? How difficult is the driving?

I'm not sure which airline you have booked and what your flight options might be, but from the sounds of things - meaning it sounds like you might prefer to keep things simple - you sound like a good candidate for a leisurely train ride to Paris.
Driving in Europe isn't SO hard, but between foreign driving rules, road signs, and drivers (I think most people find driving in Paris to be daunting), not to mention the challenges of navigating, I think you'd have a much more relaxed time as a passenger.
