Comments, suggestions for initial itinerary in Dordogne & southern France?

We are booked on a 8 day cruise which follows the Normandy coast and ends up with transport to Bordeaux airport. However we are extending our vacation for about 2 weeks in order to see some of southern France.

Originally I had planned Languedoc and Provence, But I've fallen in love with the countryside, castles, caves and villages of the Dordogne. It looks very "green" to me compared to Provence, which looks more arid.

Anyway here is what I have at the moment, would love comments and suggestions

3 nights Bordeaux ~~~ we arrive at the airport around noon. We would meet my sister-in-law who will be flying in to join us, pick up a rental car, drive to Bordeax and stay 3 nights. We have a nice apartment booked, with a washer and dryer, which will be welcome after the cruise. Plan is to explore some of the city, maybe a day trip to St Emilion.

5 nights Salat la Caneda ~~~ when we leave Bordeaux we would stop in St Emilion (if not done on a day trip from Bordeaux) on the way to Sarlat. While in Sarlat we want to enjoy the town and take side trips to caves and villages (your favorites?)

1 night St Cirq Lapopie ~~~ we would stop at Pech Merle Cave on the way from Sarlat to St Cirq Lapopie

1 night Carcassone ~~~ I know it may be touristy but I have to see it at night.

3 nights???? Uzes or nearby? Small town, nice village? ~~~ I'm really stuck here, not sure where to stay, what to see. Avignon would be the obvious, but not sure I want to drive in there. Is there a train from Uzes? Or a wonderful village nearby?

Leave Uzes or nearby, drive to Annecy, stay 1 night before flying home from Geneva the next day.

Not as interested in Roman history as much as medieval French history.

We are interested in wine, but not all day tastings. We loved Castello Banfi and Castello di Volpaia in Italy. Great tour combined with a great lunch. Would be interested in something like that if anyone has done something similar.

I do have some guide books, and have just started pouring over Stu Dudley's amazing notes on Dordogne. So many choices!
