Christmas in Ireland - Itinerary and Activities

Hi folks -- my husband and I are both teachers in our mid-late twenties who will have a week in Ireland from Dec. 21-28 before a teaching training conference we're attending in Dublin. We're planning to fly into Dublin, then do a circuit of the country. I was thinking of trying to hit Belfast, Sligo, Galway, Limerick, Dingle peninsula, Killarney, Cork, Kinsale, Waterford, and Kilkenny... but that seems like too much for one week. We'd like to actually enjoy each of these places! We're planning to rent a car... So what I need to know is:

1. Where's the best place to spend Christmas in Southern or Western Ireland?

2. Which of those stops have the absolute "can't miss" attractions, as far as beautiful scenery or iconic landmarks as well as quaint villages with delicious food and cute cafes?
