central eurpoe in september

Does anyone have a pension or B&B to recommend in Rudesheim, Geisenheim or Bingen? Also, is there only river cruises between St. Goarshausen and Koln or is it possible to take a longer one from Bingen area to Koln?
Any preferences for small towns to spend a few days at in Interlaken?
We are avid hikers/backpacker in the Canadian Rockies so would like to do some day hikes in Switz., Dolomites and Austria. Suggestions?
Thanks for feedback. This is our first trip out of Canada so any help is so appreciated.
