Castles, B&Bs, etc. to stay in - northern Romantic Road and Koblenz/Rudesheim?

Hello,

I am interested in hearing accommodation recommendations for a couple of areas in Germany - 1) Nordlingen to Wurzburg (Romantic Road), and 2) Koblenz to Rudesheim.

I would love to hear any suggestions involving a stay that would be safe and clean (such as hotels), but have a particular interest in hearing of castles, farms, guest houses, B&Bs, etc.
