Cash or Credit Cards in Tuscany?

We just got back from Tuscany and Cinque Terre 2 days ago. We've been to Italy several times but I was surprised how many places don't take credit cards.
You can't even used a credit card to pay for the major museum admissions. Yes, most restaurants accept credit cards. But many places do not.

We always take our Cap One VISA, which as qwovadis mentioned, has no fees attached and from which we can get cash at an ATM.
What got me thinking was a video we watched where craftsmen (and women!) in some of the hilltowns were visited, and I wondered if those people were set up to take CC. I guess some will and some won't!
By the way, in regard to alerting your CC company that you will be overseas, the card I use on the internet refused the charge from the Scavi Tour of the Vatican! (I can see why, it comes through as Ufficio Scavi, I'm sure the CC company had no idea what that was) The Scavi office was great though, they said we could pay when we got there, but I called my CC company and told them that the charge was ok, and then had Scavi put it through. Don't want any loose ends there!

One will, on occasion, receive a discount when one offers cash.
There’s also a chronic shortage of small change in Italy, and you’ll win a friend for life if you offer the correct money.
