Could anyone help us to decide which canal route is the best? There are four if us going next year probably during August and we hope to go for two weeks preferably one way. We thought France would be best but we are open to all suggestions. Thanks Sylvia

There are trip reports on Fodor's of various canal trips. Perhaps you can pull them up with the search function.
We took the Burgundy Canal one-way trip from Saint-Florentin to Montbard. I chose the route because it had the most significant old stones (chateaux, the hospice in Tonnerre, the Forge Buffon) within walking distance of the canal. The pictures between the map represents our itinerary.

This was before trip reports existed.
Normally, I would highly recommend the Canal du Midi for a first time voyage. However, August can be hot on the canal and it will be crowed.
That still leaves a lot from which to chose. There are many routes in Burgundy which would make excellent two week itineraries. I would probably take a look there. Temperatures will be more comfortable as well.
