Is the Paris Visite Card the best value or am I better off buying a carnet of tickets and 2 separate fares for the airports?
And if I can sneak in a second query...
Have looked up the route for Paris to Orly and it seems a little more involved- need to be at the airport by 10:00 am- how much time would you allow by train or taxi?
Aware that peak hour traffic in Paris may cause taxi delays.

I've never traveled to Orly. If I were going to do so, I'd try the metro to Denfert Rochereau then the ORLYBUS to the airport.
A taxi will be a little less than averages reported for going to CDG, as Orly as a little closer to Paris. So figure 40€ rough guess.

An RER ticket CDG-Paris is about 8.60€
A carnet of metro/bus tickets is 11.60€
A Paris Visite pass for 3 days, zones 1-3 is 20.00€
A little cheaper is a Mobilis 'day ticket' for 5.90€

I've never traveled to Orly but it is closer than CDG. I think it is a little more complicated in that the RER stop isn't right there as it is for CDG. A taxi would be cheaper than to CDG, and of course, you can always take the Air France bus which goes right there. There is a municipal bus that goes right to Orly also, from near the Denfert Rochereau RER stop, as Travelnut suggests.
The Paris Visit costs 40 euro for three days for zones 1-6 which is what you'd have to have for the airports. You can't use Mobilis tickets for the airports, but it can be good if you plan to take the bus/metro a lot within Paris one day.
If I were you, I would not buy any kind of pass like Paris Visite. Buy a carnet and if you've used it up in two days, but a Mobilis for your third day of sightseeing. Buy the RER tickets separately.
