Buying train tickets for Italy

We will be flying into Milan (MXP) on May 6. We need to take the train to Florence from the airport as we have hotel reservations for 4 nights in Florence. I have already checked and we will need to change trains in Milan (city) it seems. My question: should I book our train reservations in advance, or wait until we get to MXP since you never know if we will get in late, or how long passport control will take? Is it likely that seats will sell out in advance? And if we reserve in advance and we cannot make the train reserved, can we change tickets with little hassle?
