Brixen/ Bressanone: ideas for a few days?

I am considering stopping in Brixen/ Bressanone for a few days in early June. We travelled this route last month (but did not stop) and love South Tirol and the smaller cities of north Italy (Trento, Verona). We would probably be travelling by train from Munich, and the stop after may well be a re visit to Verona (then Lake Como) . Our trip last month also introduced us to the amazing Dolomites, basing in Ortisei. But am not currently planning on heading into one of the valleys this time, just a short stop to break up the train ride to Verona, looking for a walkable city with nice ambience and old town, plus a bit of mountain scenery and easy walking trails. Plose looks close and accessible by bus.

There aren't many TR's about Brixen without a car ideas :(

Am unclear whether a day for the town and a day for Plose is all I'd need, ...the Brixen card is confusing http://holiday.brixen.org/en/brixencard-advantages/brixencard/3-0.html as it lists the postbus ride Malles/ Mustair which looks a very long way from Brixen, but I guess if it is included it is a worthwhile and do-able daytrip, I just can't follow how it would work.

Any other ideas most welcome.
