Brittany/Normandy and Loire Valley

We are planning our second trip to France shortly. Can anyone provide us with some guidance?

We will be coming from overseas and landing in the morning. Our intention is to rent a car and drive out for 4-5 night stay and then return the car at the airport and spend 5 days in Paris. We have seen Paris in detail so the 5 days in Paris is just to experience the markets and the culture and the food.

With respect to the front end of the trip, does anyone have any advise as to how to spend it and where? We have heard a lot of nice things about Brittany, Normandy and Loire Valley. Any suggestions? As well, is it better to settle for 2 to 3 nights in one spot in Brittany and travel each day from there? The same for Loire Valley? Amboise?

We would appreciate any suggestions. We are just starting to plan.

PS - we love seafood - so good restaurant ideas would be great in Brittany area.
