Book activities now or later for AC (boat), Tuscany (bike), cooking class?

Traveling to Rome, Positano, and Tuscany in late Sept/early October and there are several activities that I think we want to do, some of which may depend on the whether. So I am wondering if I should book activities now or wait until I am in Italy to have a better sense of the weather. Also if you have recommendations on particular tour companies, that would be great. In the AC, we would like to take a semi-private boat trip to Capri and the surrounding area. In Tuscany, we would like to do a day bike tour. Also planning on a cooking class (half day or so) in both places. As always, your feedback is much appreciated. Thank you.

I'd book the cookery classes from home, the bike hire depends on the amount of support you want. If you are just hiring a bike then do it on the day, if you want someone with you or a picnic laid on then book from home. Boat trip i'd book there.

Tuscany is a big area so you need to be more specific about where you are staying if you want suggestions.

I would wait to book them all unless you have some reason to believe some very particular teacher or guide is likely to be sold out. I would not like to be in a cooking class on a beautiful day if all the other days were rainy.

I would book the cooking class ahead of time and leave the rest until you arrive at your destination.

Where will you be staying on the AC?

We are staying in Positano on the AC. In Tuscany, we are staying in Reggello, but will have a car. I was looking at some of the biking day trips that I Bike Tuscany offers.
