BKK to CDG to ATL on Air France

We are flying from Bangkok to Atlanta on Dec. 31 / Jan 1 with a stopover in Paris / CDG just for the night - all flights are on AF. Will our luggage be checked thru so that we need to have our overnight stuff in a separate carry-on? I'm looking at hotels at CDG - most involve a shuttle. We will not have cold-weather clothes so I am thinking it might be best to just stay in the Sheraton that is right in CDG. I assume most shuttles would involve being outside for at least 5 or 10 minutes?
