Biking from Passau-Vienna-Budapest-Prague - ?Reservations-Recommendations?

My wife and I are planning on biking the Danube River Path from Passau to Budapest and the Greenway from Vienna to Prague. Dates are July 3-24.
We are interested in B&B's, wineries, farm houses, and such. Would consider carrying a tent and such for camping, but concerned about rain.

-Are reservations for lodging a must? Can we find accomidations in small villages a little away from the bike paths?

- Any notable lodging at wineries or farms along this route?

-Best bathhouse in in Budapest?

-Guides in Vienna, Budapest, and Prague for walking tours and so forth?


We plan to fly into Frankfurt, train to Passau, bike to Budapest, return on ferry or train to Vienna, bike to Prague, then train back to Frankfurt.

Any suggestions will be very appreciated.
