Lonely Planet's website, The Thorn Tree forum would be a good place to check.

Following on from your other thread, which has deteriorated somewhat, are you intending to buying a bike once you get to Europe or bring one with you? Maybe you are already in Europe?
Travel insurance usually covers health care but you need to check they don't count cycling as a dangerous sport - don't laugh, some do!
I hope you manage to sort out a trip and have a whale of a time cycling though Europe!
Good Luck.

I'd start with the european main bike paths http://www.eurovelo.org/routes/ , then look in detail in each country. Bike paths are far nicer (most of the time) than just hacking down busy roads.
Which countries?

This website gives you a bunch of info which might help, but is more focused at bike holidays rather than holidays on a bike
