We can always jump on a plane ... but is there a more fun/interesting way to get between points A & B?

Unless you have a lot of time or really enjoy sleeping on trains, flying is easily the best option. It is a long ride from Stockholm to Paris.
Look for a cheap flight:

the earlier the booking, the more likely a lower price, and the lowest will be mid-week.
flying is your best option, check www.skyscanner.com for comparisons.

Train travel between Stockholm and Paris will definitely be the most interesting option. You will, however, have to change trains at least twice. Probably in Copenhagen and Cologne. And it will NOT be cheap.

The CHEAPEST option will be a flight on Ryanair. They have daily flights between Stockholm Skavsta airport and Paris Beauvais Airport. Public airport transportation is available from/to both airports and the city centers. Check www.ryanair.com Ryanair's flights are usually not displayed on search engines on the internet. 9 times out of 10 I guess you will find a much better deal with Ryanair than with SAS and/or Air France between Stockholm and Paris. If you don't mind flying Ryanair (some people do) I guess this will be the cheapest way to transport yourself from A to B in this case.
The landscape won't change that much if you take the train. Either flatlands with lots of trees, or flatlands with lots of fields.
The best connection requires, as hoxa said, just 2 changes (Copenhagen, Cologne), with a sleeper train from Copenhagen to Cologne. So for most of the trip, you won't see much but sleep.
Since Skavsta airport is quite far away from Stockholm, you will already see a lot of Swedish countryside during the bus ride. Flying should be the best option.
