Best time to visit Provence

A group of us (10 adults) are planning to visit Provence in 2016 for about 10 - 11 days, and prefer to travel during off peak season. What would be a good time of year to visit. I realize we will not catch lavender season but what about the poppies/sunflowers, or is it better to go in September. We are mostly interested in visiting historical landmarks and enjoying little nearby towns and perhaps day trips to Marseilles, Nice and Monacco.
Any advise is very welcome.
