Best base for couple days in southern Germany

Hi! Our son is studying abroad near Koblenz (school is in Vallendar) this semester and we get to go visit him for 2 weeks in early April. Current plan is as follows:

Sat-Sun -- Easter weekend in Frankfurt
Mon-Fri -- stay in Koblenz (with car rental) to be close to our son; day trips (he will be in class) to Cologne and Rhine River. Considering options for other days -- Moselle River? Heidelburg? Is the Black Forest close enough to get to by car?
Fri-Sun -- Road trip with him, we want to see the Ludwig castle (and others), would love to see Rothenbrug (sp?), maybe Nuremburg. Not sure how far the Ludwig castle is driving from Koblenz. I know this is so much to fit in a weekend...
Sun-Wed -- Say goodbye to him, train to Berlin and stay there
Wed-Fri -- London (my husband has never been) and then home

So my questions are about the day trips -- where to go from Koblenz. And then where to base ourselves for that 2nd weekend. Is it totally insane to think we can see the castle(s) and a town or 2 along Romantic Road. Should we go to Nuremburg? Would take make sense for a base for these couple days? (I have Starwood points). Or would Stuttgart make sense? If no, what would best base town be?

Since we will have time in Frankfurt, Berlin, and London would rather have a smaller quaint town for those couple days. We like beautiful scenary, outdoor activities, art (but plan to concentrate on that in Berlin; son isn't as into art!), wine and beer, historical sights...
