We are looking at reasonably priced bed and breakfasts ( one room in a house or in a small inn) for 2 adults in Aix en Provence and in the area around AVIGNON, such as St Remy in May. Any recommendations? We will have a car and will have 4 -5 days so is it better and possible to stay in one place and drive around rather than switching locations?

Hi Shellymae, have a look at www.masperreal.com you won't be disappointed. Kevin (who also posts regularly here) and Elisabeth are wonderful hosts and the location would be good for you.
I would stay in the Avignon area and do a day trip to Aix. However, I wouldn't stay too close to Avignon because there is some ugly urban sprawl there than might spoil your image of Provence.
Consider Kevin's place in the Luberon. He is a frequent Fodors poster & an American, so you won't have any language troubles.

I'd go for a smaller town like Vaison la Romaine which, since you have a car, is chaqrming and close enough to Avignon and all the other places. Have a look at http://www.lecypresbedandbreakfastprovence.com - lovely place and real nice hosts. I also would stick to one place if alone for safety reasons: it is definitely not a good idea driving around with all your luggage on board.
Just saw this post. We stayed at Le Clos du Rempart within the walls of Avignon for 7 nights in March 09. Madame Assad is the owner and has 2 one bedrooms each with a bathroom and a 2 bedroom apt. You get breakfast if you book a bedroom. there is also a nice size living room with TV, kitchen and beautiful terrace. Wifi is free and is fast. We used the apt and used her garage (not extra). It was very easy to get in and out of the walled city from her place. We loved it. I did a review on Trip Advisor. Her web site is www.closdurempart.com.
Vaison la Romaine is really not that close to Avignon; it's about an hour's drive via the autoroute.
