Barcelona and Italy for 3 weeks

Hello I am planning a vacation to Europe for almost 3 weeks (19 days) in early July this summer. I am going with my wife we are both in our mid-late twenties and have never been to Europe before. My wife and I both love the beaches with nice sand and clear water (we are from Saskatchewan so this kind of rare here!). We also would like to see the European culture and some great food and night-life. So to get both the nice beaches and interesting culture and society we have chosen the following.

-Barcelona for approximately 5 days. (please comment on what beaches to hit up in Barcelona area!)
- Paris for 3 days.
-Italy for 10-12 days (in Italy we are thinking of Rome being our main spot with potential for a few days in Sardinia)

My main reasons for being on here is trying to find out what everyone thinks of Sadinia? How easy is it to get to Sardinia? Are the beaches as beautiful as everyone says? What's accommodations like here? Is it crazy expensive? How many days should I give myself in Sardinia and Rome? Are there better beaches in Italy to hit up that wont require taking a ferry or plane ride to Sardinia?

Also am I missing anything people would say would be a must see in the Italy area for travellers like myself and my wife? We thought about Venice but its kind of out of the way?

Is Barcelona a must see? or should we move towards just doing the French & Italian Riviera and then just spend more time touring Italy?

Any comments or feedback would be greatly appreciated!
