Try The Mustard Seed Inn.
It's a great place--a big, old house with gardens in the back run by a cheerful man named Daniel originally from Dublin. He grows everything in his garden and they make excellent meals at night.
It's in a small town with a nice small church--if you're catholic, go to mass with the farmers and their children; it is very charming.
Don't miss the Mustard Seed. You can sit in the living room with Daniel's cat by the fire and wander the garden paths or the tiny town below.
I forgot to mention--it's in the southwest, in Ballingarry, close to teh Shannon airport

We stayed at Four Winds B&B in Kinsale (County Cork). It's a little ways out of town (maybe a 15 minute walk?) but totally worth it.
We also stayed at Dunaree B&B, in Bunratty. This was the best place we stayed during our entire trip. We stayed here on our last night, and it was very easy to drive to the Shannon airport the day of our departure.
One last recommendation I have is Flannery's, in Salthill. Salthill is very close to Galway. It was easy to drive from here to the Cliffs of Moher and also to Rossaveel to catch the ferry to the Aran Islands.
