You can fly Ryanair on Wednesdays (probably other days also, but not Thu, Fri or Sun this cheap) for 0.01 euro plus taxes of 22.31 euro (yes, that is not a typo - - 0.01 euro) from Nimes to London Stansted, and then onward London to Dublin for 6.99 GBP, plus taxes of 13.32 GBP
Check sncf.fr for train travel, Avignon to Nimes - - surely it won't add too much.

I think it might be simpler to take the TGV from Avignon direct to Charles de Gaulle airport, and then fly direct to Dublin with Aer Lingus (who offer some excellent deals on this route, often as cheap as Ryanair).
The disadvantage with flying 2 consecutive Ryanair flights is that you can't check your bags all the way through, and if the first flight is delayed for any reason, you're not covered if you miss the second flight, so you could find yourself stranded or out of pocket.
It's a small risk, but one worth taking into account when planning the journey.

Thanks, Rex and Hanl. The CDG option is excellent. For the last few years we have taken the TGV to Paris to enjoy a few days there. It would make sense to go right thru to CDG and Aer Lingus. (We hope to enjoy the six month-long Joyce festival that begins in February.)
